Squirrelfish Meuniere

By Capt. DICK MAY - Catch 'em & Cook 'em , Pine Island Eagle

Ingredients:

4 Tbsp. butter

1 tsp. canola oil

1-3/4 pounds squirrelfish fillets

1/2 cup of milk

1/2 cup of flour

Salt and pepper to taste

4 Tbsp. lemon juice

4 Tbsp. chopped fresh parsley

4 Tbsp. thyme

4 Tbsp. rosemary

How to:

In a large heavy skillet over medium heat, melt 3 Tbsp. butter with he canola oil. Dip fish fillets in milk and roll lightly in flour and season with salt and pepper. Saute fish on both sides until cooked, tuning once. Transfer to a heated platter and keep warm. Melt remaining butter and stir in lemon juice and herbs. Drizzle sauce over fish.
