Shrimp with broccoli

3/4 lb cooked shrimp - shelled and deveined

1 tbsp dry sherry

2 tbsp canola oil

3 green onions - chopped

1 tsp minced ginger root

1 lb broccoli - blanched and cut into 1-inch pieces

1/4 cup chicken broth

salt to taste

2 tsp cornstarch mixed with 1 tbsp cold water

1/2 tsp sesame oil

2 cup cooked rice

How to:

Sprinkle shrimp with sherry and set aside to marinate for 1 hour. In a Wok or large skillet, heat oil over high heat. Add green onions and gingerroot and stir-fry for 30 seconds. Add broccoli and stir-fry for 10 seconds. Add shrimp, chicken broth and salt and bring to a simmer. Stir in the cornstarch mixture and heat and stir until thickened. Stir in sesame oil. Serve over hot cooked rice.
