Mango shrimp kebabs

Many of you have tried our Low Country Boil and have told us how much you like it. Try this for a different take on this old fashioned meal.


1 1/2 lb. large shrimp, peeled and deveined

2 lg. red bell peppers, cut into one-inch cubes

2 mangos, peeled and cut into one-inch cubes

1 sm. red onion, cut into one-inch pieces

2 limes, cut into wedges

How to:

Prepare the grill to medium-high heat.

Sprinkle the shrimp evenly with 1/2 teaspoon of salt and 1/8 teaspoon freshly ground pepper. Thread the shrimp, bell pepper pieces, mango cubes and onion pieces alternately onto each of eight, 12-inch skewers.

Place the skewers on a grill rack coated with cooking spray and grill for two minutes on each side or until the shrimp are done.

Squeeze juice from the lime wedges over the kebabs and serve.

Serves 4 with two skewers each
