Jalapeno-lime grilled grouper

This can also be delicious made with amberjack, tilapia or mahi-mahi


— 3 Tbsp. chopped, fresh cilantro

— 2 Tbsp. fresh lime juice

— 1 1/2 to 2 Tbsp. chopped, pickled jalapeno peppers

— 1 Tbsp. grated, fresh ginger

— 1 1/2 tsp. minced, fresh garlic

— 4 grouper fillets (about 1-1/2 lbs.)

— 1 tsp. salt

— 1/2 tsp. pepper

— Mango relish

How to:

Perheat a grill to 350 to 400 degrees

Coat a grill tray or basket with cooking spray and place on the grill. Heat, covered with the grill lid for 10 minutes.

Combine the cilantro, lime juice, jalapeno pepper, grated fresh ginger and minced fresh garlic.

Sprinkle the fish with salt and pepper. Place the fish on the hot grill tray or in the basket and grill the fish, covered with the grill cover, for six to eight minutes on each side, or until the fish flakes with a fork, spreading the fish with the cilantro mixture during the last two minutes of grilling.

Serve the fish with mango relish.

Serves 4

Mango relish

Stir together:

— 1 1/2 c. diced fresh mango

— 1/2 c. diced red bell pepper

— 1/4 c. diced red onion

— 1/4 c. chopped fresh basil

— 1 Tbsp. honey

— 1 Tbsp. fresh lime juice

— 1/4 tsp. salt

Makes about two cups
