Grilled snapper with caper sauce

1/3 c. lime juice

1 jalapeno pepper, seeded

3 garlic cloves, peeled

1/4 tsp. dried thyme

1 tsp. salt

1 tsp. pepper

4 snapper fillets (6 oz. each)


3 Tbsp. lime juice

3 Tbsp. olive oil

2 Tbsp. water

2 tsp. red wine vinegar

1/2 c. fresh cilantro leaves

1 shallot, peeled

1 Tbsp. capers, drained

1-1/2 tsp. chopped, seeded jalapeno pepper

1 garlic clove, peeled and halved

1/4 tsp. pepper

How to:

In a small food processor, combine lime juice, jalapeno, three garlic cloves, salt and pepper. Cover and process until blended. Pour into a large zip top bag. Add the fillets and seal the bag and turn to coat. Refrigerate for 30 minutes.

Coat the grill rack with cooking spray before starting the grill.

Drain and discard the marinade.

Grill the fillets, covered, over medium heat for three to five minutes on each side or until the fish flakes easily with a fork.

Meanwhile, combine the sauce ingredients in a small food processor. Cover and process until blended. Serve with the fish.
