4 fish fillets
Salt and pepper
1/2 c. flour
1/4 lb. mozzarella cheese, sliced thin
1 c. Italian seasoned bread crumbs
1 egg, beaten
1 Tbsp. milk
1 lb. angel hair pasta
1 c. spaghetti sauce or marinara
Grated parmesan cheese
Prepare the pasta per package directions, then drain and keep warm.
Heat the sauce in a small pan and hold on stove at the lowest heat setting.
Sprinkle the fish with salt and pepper, dredge in four, dip into beaten egg and then dredge in seasoned bread crumbs.
Set the burner on medium to medium-high, about 350 degrees. Using just enough olive oil to cover the bottom of the skillet, pan fry the fillets for about three minutes on each side until brown. After turning the fish, place a thin slice of mozzarella cheese on each piece of fish.
Remove the pasta to a platter, place the fillets on top of the pasta and our the sauce over all. Sprinkle the grated parmesan cheese over the fillets and offer more cheese on the side.
